Details
Mathieu Gosztyla is a small and traditional Champagne House from Baslieux-sous-Chatillon, in the heart of the Champagne region, a stone's throw away from Epernay. The day-to-day management is in the hands of Fabièn-the son of a Champenois (Mathieu) and his mother from Poland (madame Gosztyla). Fabièn is immensely passionate about quality and terroir. Only hand-harvested from own vineyards and under no circumstances is worked with purchased grapes material. The House works exclusively with the ' lekwijn ' (the cuvée or vin de goûte). The ' waist ' (the inferior press wine) is sold to the large houses. This wine is made only in exceptionally good years and is always one and the same vintage. The wine is not adulterated with cuvée's from other years (something that is very common in Champagne). After bottling follows for the Vintage a maturation period of at least 7 years (!) sur lattes for dégorgement. Which is to say that the wine in bottle for at least 7 years fermented in the bottle before the yeast cells are removed. A wine to put in your cellar (max. 4 to 6 years) or drinking 'm just now, in his youth.
